Not everyone knows that oreos are vegan… It makes every vegan smile knowing that oreos do not contain any animal derived ingredients and are safe for vegans to eat. I am a self confessed lazy baker this recipe is super simple and will not require much time or effort. If you love oreos then this recipe is for you; these are the perfect snack to enjoy anytime of day especially with a cool glass of oat milk . These brownies are thick, fudgy and moist and literally oozing with flavour. The rich chocolate Oreo flavour will leave you craving more of this indulgent snack.

It’s a good idea to make sure you don’t overcook the brownies so they stay gooey and have a melt in your mouth texture.I always use a high speed food processor for all my baking it just makes life so much easier and ensures that texture is smooth.




Ingredients

1)Self raising flour: sieve the flour to ensure it is super smooth

2) Brown sugar: You can use any sugar of choice my preference is to use brown sugar but you could use coconut sugar or even white sugar.

3)Soy vanilla yoghurt: This will intensify the flavour and works as an egg replacement

high quality cocoa powder its best to try and use at least 80% cocoa

Chocolate chunks: You can use high quality dark chocolate chips or alternatively use a vegan chocolate bar and break into into small chunks.

Choice of plant based milk.

Oreo cookies: 1 pack of oreos broken up and crumbled into pieces.

method
1) preheat oven at 180°C grease and line a baking tray with grease proof paper and set aside to use shortly.

2) Combine melted chocolate chips sugar and soy yoghurt use a high speed food processor to easily combine.

3) Combine flour cocoa powder and mix until fully combined add your choice of plant based milk. Pour into a bowl and slowly fold in the oreos, (remember to leave some to decorate on top).

4) Carefully pour the brownie mixture into the lined baking tray and bake in the oven for around 20 minutes or until a knife comes out clean.

5) Let the brownies fully cool before slicing them.
