Happy Halloween beautiful people today is the day to be spooky and scary. I don’t actually really know what the origins of halloween… apparently it’s a it originated when celts celebrated their new year 2000 years ago. I’m not really sure about what it is but I have made some vegan halloween cupcakes. For these delicious scary treats you will need:
250g self raising flour
200g brown sugar
150g cocoa powder
1 teaspoon baking powder
200g dairy free butter
4 tablespoons of soy yoghurt
pre made fondant icing
To be honest I don’t know if I make cupcakes the right way, but I do know it is by far the easiest method I know.
I simply add butter and sugar to a high speed food processor and mix together until smooth. Then I add the flour cocoa powder and soy yoghurt mix using the high speed food processor finally stir in the baking powder.
2) scoop the mixture into cupcake cases bake in a preheated oven for around 20 minutes until the cakes are perfectly risen.
3 ) While the cupcakes are baking in the oven we will mix up the icing this will be done in 3 batches as 1 will be orange and the other green the other white. Using a teaspoon add green food colouring to 1 roughly around the size of a ping pong ball, keep kneading until the colours is fully combined. Using the orange food colouring repeat the process the orange ball needs to be bigger about the size of a tennis ball. Finally roll out 1 white ball of icing about the size of a tennis ball.
4) When cooked allow your cupcakes to cool. When they are fully cooled slice the tops of your cupcakes off so the tops are flat.
5) dust the surface using icing sugar. then using a rolling pin roll out your white fondant icing into strips use a cutter to cut out a circle shape to cober your cupcakes.
6) Roll the orange icing into balls and decorate using a small knife to carve pumpkin faces. Top with small green fondant storks serve and enjoy.
