This is a delicious Caribbean inspired meal which will leave your taste buds tingling as it is packed full of exotic flavours and will give you the taste of the Caribbean from home. I was inspired to try and make my plantain a little more flavoursome so i’ve developed a marinade that will send you absolutely wild.

mango and jerk plantain served with rice n peas

This recipe is a marinade so it is super simple and literally all you will need to do is combine the following ingredients in a blender until smooth then covered the plantain in this marinade.

ingredients for Marinade

1 tin of chopped tomatoes

1 teaspoon of onion powder

1 teaspoon garlic powder

1/2 teaspoon thyme

5 spring onions

black pepper

1 teaspoon of brown sugar

2 teaspoons of ground allspice

1 teaspoon nutmeg

1 teaspoon cinnamon

1 scotch bonnet pepper

1 tablespoon of tomato paste

2 tablespoons soy sauce

1 tablespoon of white vinegar

You will then slice your plantain and fry in coconut oil over a low heat until soft, the time for this will vary on how ripe your plantain is. I hope you enjoy!!
