This is a delicious Caribbean inspired meal it is packed full of flavours colours and healthy ingredients. This is super simple to make and will leave your taste buds tingling.

The first part of this yummy meal is ackee stir up, ackee is yellow in colour and is traditionally served with salt fish however I provide a delicious alternative packed full of flavour for this recipe you will need:

1 tablespoon of olive oil

root ginger finely chopped

1 garlic clove finely chopped

half a red chilli diced and finely chopped

1 red onion finely sliced

1 red pepper deseeded and cut into small chunks

1 tbs of soy sauce

grated chilli

540g can of ackee drained

Heat the oil in a large frying plan and slowly stir in the red onion, allow to cook for a few minutes till soft, add the garlic chilli and ginger, sprinkle with soy sauce and l allow the flavours soak up and be absorbed fully. Mix in the pepper turn to a low heat until all the ingredients are nice and soft.

The next part of this delicious recipe is Callaloo now if you’re not sure what Callaloo is a popular Caribbean leaf vegetable which reminds me of spinach. Callaloo is a superfood and a great source of vitamins and minerals it has a very high source of iron calcium and potassium it also provides immune boosting vitamins and C. ingredients

1 tablespoon olive oil

2 cloves of garlic minced

1/2 scotch bonnet pepper

1/2 tbs spoon of thyme

1 tin of callaloo

sea salt

paprika

1 red pepper deseeded and cut into small chunks

1/2 tbs of black pepper

  1. In a large frying pan heat olive oil and sauté the red onions until they are soft add the garlic and mix in the red pepper tomato paprika and salt and pepper. Let it slowly soften stir in the callaloo add the thyme, tomato, paprika and add a small amount of boiling water. Let it simmer until soft. Serve with rice and peas.
