This dinner is super easy to make and will leave you feeling completely satisfied without the need to snack or pick at other foods. Lentils are a great source of potassium, calcium and zinc. Lentils are brimming with fibre and are the perfect food for aiding weight loss, studies have claimed that eating a couple of portions of lentils each week can aid in gaining a flat stomach. This lentil recipe is super easy and tastes incredibly delicious.
Okay so you will need
5 medium sized potatoes
1 handful of asparagus
1 handful of tender stem broccoli
1 cup of red lentils
organic olive oil
1 organic vegetable stock cube
1 grated carrot
1 teaspoon gram massala
1 onion/ clove of garlic
The method is very simple, so here we go….
- Cover your chopped potatoes with olive oil and put in a preheated oven at 200 degree for around half an hour, or until crispy. Wash your lentils and cover with water put to boil until soft for around 20 minutes, add your vegetable stock cube to the lentils and allow the water to be absorbed.
- Now boil your asparagus and tender stem broccoli for around 10 minutes until soft. Lightly fry your onions and garlic until light brown add your gram massala grated carrot and salt and pepper, add your lentil and potatoes and stir lightly fry for around 1 minute.
- Now enjoy a healthy nutritious meal, fabulous!
